Preheat oven to 325 degrees. Lightly butter two mini-muffin trays (12 muffins to a pan). In a mixing bowl, gently stir together the ingredients with a fork until combined.

Use a cookie scoop or spoon to fill muffin cups approximately ⅔ full. Bake approximately 20 minutes, until lightly brown.
