Country Cornbread Muffins

Preheat oven to 375 F.

Place 12 non-stick muffin liners into muffin pan. In a large bowl combine cornmeal, flour, baking powder, baking soda and salt. In a separate bowl combine honey, eggs, butter and Borden 1% Low Fat Buttermilk until smooth.

Add the wet ingredients to the dry ingredients and mix thoroughly, some lumps are okay. Add Borden Buttermilk if you think the batter is too thick.

Pour batter into muffin cups, filling 2/3 full. Bake until golden brown and toothpick comes out clean.
