This recipes yields enough food for an average of 8-10 portions.
3 large potatoes, peeled and cut into 1-inch cubes
1 teaspoon salt plus extra for cooking water
1 teaspoon pepper
⅔ cup 1% Low Fat Buttermilk
2 tablespoons butter, chopped
2 green onions/chives, finely chopped
Place potatoes in a large sauce pan and enough water to cover by a few inches. Bring water to boil and add a pinch of salt. Cook potatoes until very tender, about 20 minutes. Drain potatoes and place in a large bowl. Mash potatoes with a potato masher. Mix in salt, pepper, Borden 1% Low Fat Buttermilk, butter and green onions. Stir until blended well and serve hot.
