  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 teaspoon salt plus extra for cooking water
  • 1 teaspoon pepper
  • ⅔ cup 1% Low Fat Buttermilk
  • 2 tablespoons butter, chopped
  • 2 green onions/chives, finely chopped


Place potatoes in a large sauce pan and enough water to cover by a few inches. Bring water to boil and add a pinch of salt. Cook potatoes until very tender, about 20 minutes. Drain potatoes and place in a large bowl. Mash potatoes with a potato masher. Mix in salt, pepper, Borden 1% Low Fat Buttermilk, butter and green onions. Stir until blended well and serve hot.
